Imperatives The Improper Bostonian, August 2009
The plantain, that gluey cousin to the common banana, is the (slightly bent) pillar of Dominican cooking. “We eat plantains for breakfast, lunch and dinner,” laughs Nivia Pina, co-owner of Merengue, a popular Dominican restaurant in Roxbury. “For breakfast we boil them. For lunch and dinner we fry them ripe or green. We make mofongo,” a sort of garlicky plantain mash. But a plantain is nothing without rice and beans, or steak and onions, or fried chicken chunks, or empanadas. Pina, a Puerto Rican native, and her Dominican-born husband, Hector, have built a “mini-industry” on the basis of such dishes.

Big Papi is behind the grill! The Boston Globe Newspaper, October 3, 2007
Vitaminwater sponsored a BBQ with David Ortiz on the grounds of an sprawling unoccupied (and for-sale) manse. Ortiz is unfailingly gracious, posing for pictures and looking like a natural behind the grill in a Vitaminwater chef's toque and apron, wearing large sunglasses, and brushing chipotle sauce onto flat steak before he sits down and enjoys his own lunch.
The meal includes a Caribbean favorite, pinchos, which are barbecued chicken and pork skewers; whole roast pig, also very popular in the Dominican Republic; pionones, or baked plantains with ground beef; grilled Angus steak with chipotle sauce; and paella with a choice of shrimp, chorizo, fish, chicken, lobster, or mussels. The food comes from Merengue, on Blue Hill Avenue. Hector Pina, the restaurant's owner and a close friend of Ortiz's, is on hand, supervising the cooking.

Dominican eatery in Boston thrives to success Dominican Republic, June 28, 2006
Another culture is experienced upon entering the Merengue restaurant. Decorated with paintings by Dominican artists, and aromas of Caribbean spices all come together to create a small piece of the tropical nation.
Owner Hector Piña, who first arrived from the Dominican Republic in 1986, says that he seeks to create a “grandma’s home” atmosphere. He and his wife and co-owner Nivia want food at Merengue to resemble meals cooked by mothers and grandmothers in the tropics, with plaintains, yucca, rice and beans, tangy sauces, and lots of fish.
Proudly the couple attests to visits that such distinguished Dominicans as president Leonel Fernandez and slugger David Ortiz make on and off to the eatery.

Dominican flavors, international appeal Boston.com, November 3, 2003
It's cold and dark out these late fall nights, but when you walk into Merengue, you feel as if you've landed in a tropical spot. The walls are green, and there's a faux facade of a cottage, its shingles bright pink and blue. Over the bar is a mural of parrots and bright flowers. A blender mixes up passion fruit, banana, guava and mango shakes, and a squeezer produces fresh juices. (Try the dreamy morissonando: think, liquid creamsicle).

The second, larger dining room is raspberry pink and electric blue. There are large oil paintings in vivid colors done by a well-known painter in the Dominican Republic. Paddle fans, shaped like palm leaves, lazily stir the air and blue lights hang low. The plates are fiesta ware colors: coral, gold, green and blue.
